Definition
Eating establishments that specialize in serving food that is prepared according to Jewish cultural traditions and tastes but do not have a certification from a local Rabbinic body. Specialties may include challah (braided white bread), matzoh or matza (unleavened bread), bagels, potato kugel (potato pudding), tsimmes (pot roast casserole with meat, vegetables and dried fruit), cholent (stew), chopped liver, gefilte fish (ground fish formed into patties and poached in fish stock, then served cold in the jellied stock), blintzes (crepe-like pancakes with a variety of fillings, knishes (meat-filled pastries), stuffed cabbage or peppers, cabbage soup, borscht (beet soup), chicken soup with matza balls (dumplings), felafel in pita bread (ground chick pea patties), Jewish-style deli meats (corned beef, salami), white fish salad, sable, lox (smoke salmon) and a wide variety of pastries.
