Eating establishments that offer the cuisine of Peru which features specialties such as ocopa (an appetizer of potatoes topped with a peanut, cheese, garlic and herb sauce), huancaina papas (potatoes cooked with aji chilies and herbs in a rich cream and cheese sauce), pachamanca (meat cooked in an elaborate pit barbecue), lamb in cilantro sauce, anticuchos (small pieces of barbecued beef heart on a skewer), aji de gallina (shredded chicken in a spicy nut sauce), lomo saltado (beef stewed with onions and tomatoes), seco comido (lamb in cilantro sauce with white wine and white beans), pork tamales steamed in banana leaves, and cebiche (raw fish including shrimp, clams, squid, scallops and octopus marinated in lime and/or lemon juice). Desserts may include flan, bread pudding, caramel rolls and alphares (cookies made with caramel). Fruit juice, Peruvian beer, Pisco brandy and South American wine and soft drinks may be available as beverages.
