Eating establishments that offer a cuisine which features one or a variety of specialties from Denmark, Finland, Norway, Sweden and Iceland such as crispbread, rye wafers, biksemod (hash), dishes made with herring and other pickled fish, lutfisk (cod preserved with lye), late summer crayfish, meatballs, kol dalma (cabbage rolls), roast goose, biff Lindstrom (hamburger with onions, capers and beets) and smorrebrod (a selection of tea sandwiches). Desserts may include Swedish pancakes with preserves, cakes, cookies and fresh berries. Beverages may include the traditional Scandinavian drink Akavit, a colorless liquor distilled from potatoes, which is typically served with a beer chaser. Scandinavian restaurants may also serve a smorgasbord, an "all you can eat" buffet which features a broad range of salads, hot and cold entrees and desserts.
