Eating establishments that offer the cuisine of Sri Lanka which features specialties such as red and black curries that tend to be hotter and drier than their Indian counterparts due to the liberal use of chilies, white curries that tend to be cooler due to the presence of coconut milk, buriyanis (seasoned rice dishes with meat or chicken), lampries (rice, curry and condiments baked together in banana leaves), fried rice dishes and hoppers (a kind of pancake made with rice flour and coconut milk served with a variety of toppings including coddled eggs). A wide variety of sambols (condiments) are usually served with meals. Beverages may include arrak (a liquor made from coconuts) and beer.
