Definition
Eating establishments that offer Peking-style dishes from the northern Chinese province of Shantung and the capital city of Beijing. Regional specialties may include bird's nest soup, shark's fin soup, Peking duck (a full, multi-course dinner made with different parts of the duck), fish in sweet and sour sauce, velvet chicken (a forcemeat of chicken breast and egg whites which is poached or deep-fried), Chinese style pancakes, mu shu pork, chicken with hoisin sauce, fish in wine sauce, cold noodles with spicy sesame sauce, cold noodles with chicken or pork, cold spiced cabbage and firepot dishes. Many dishes feature garlic, leeks and scallions, fermented bean paste, sweet and sour sauces, sauces made with wine-based stock, generous amounts of soy sauce and noodles and dumplings made with wheat.
