Eating establishments which offer the cuisine of Liberia which features specialties such as egusi (spinach stewed with chilies and the ground seeds of a West African melon); spiced palm-butter stew with chicken, beef or fish; ground nut stew made with peanuts; broccoli and potato leaf stew made with chilies and spices; cassava leaf stew; jollof (a West African pillau made with brown rice, chilies, herbs and stock served with a spicy peanut sauce and chicken); sauteed okra; and fried plantains. Most dishes are served with fufu (mashed fermented cassava root), small pieces of which can be rolled into a ball and used to pick up morsels from the stew. Beverages may include Ngok beer from central Africa.
